Being Green Starts in Your Kitchen

"The first step to building a greener more sustainable life, is thru the kitchen door!”

That’s the philosophy of Mariel Hemingway, whose fame began as granddaughter of author Ernest Hemingway, but quickly evolved into a rich career as Actress, Author, Model, and mother of two daughters now in their 20’s. Mariel has since become a voice for the environment and personal wellness, leading retreats across the country. She turned to Yoga and meditation as a source for finding her center and now is continuing that path by guiding others on a journey to discovering personal balance and peace with organic, healthy and great food.

In Mariel’s third book, Mariel’s Kitchen, Simple Ingredients for a Delicious and Satisfying Life, she shares how the choices you make at the grocery store, in your kitchen and then at your dinner table, add up to a healthier you and a healthier world.

Best part is, the recipes in this book are not boring and flavorless but scrumptuous and do-able.

This isn’t about dieting, or sacrificing, but having a top 10 or 15 foundation foods and tastes that begin with what  is grown organically and locally!  She’s all about going to a farmers market or fresh produce section of your favorite store and preparing a meal centered around what’s in season that week!  Sustaining your body, equals sustaining the earth and environment.

The 75 recipes are broken down by the seasons.

Here is one of Mariel's goodies I'm going to try:

Cranberry Blisscuit Mini Muffins:

Coconut oil for greasing muffin tin

1 cup almond meal

½ cup plus 1 tablespoon whey protein isolate powder

½ cup Xylosweet

¼ cup unsweetened shreaded coconut

1 teaspoon baking powder

1 teaspon xanthum gum

¼ cup coconut oil

1 large egg

2 large egg whites

¼ teaspoon vanilla extract

½ teaspoon almond extract

1 cup fat free milk

2 ounces organic goat cheese

1/3 cup dried cranberries

Mix and cook at 300 degrees

Other yummy recipes include Mariel’s Spinach and Mushroom lasagna that replaces the need for heavy pasta, her signature Spicy Mixed Nuts, that aren’t covered with oil, To quote Mariel, you are an environmentalist by eating a local lunch, rather than one shipped for miles to your table.
