Cindy's Recipe Fave
Chicken Piccata!
5-6 Thin Chicken Breasts you dip in a bowl or plate of light flour seasoned with salt/pepper/basil mix ( or add your faves seasonings)
Brown for 2 minutes on each side in skillet with olive oil till brown - then remove and hold to the side and cover on plate with a lid.
Now create Sauce in separate Skillet
2 tbs fresh lemon juice
1/4 cup white wine
1/2 cup chicken broth
1 tsp minced garlic
Let it deglaze then add:
2 T capers
2 lemons sliced
Chopped parsley
2 T unsalted butter, or in my case "I Can't Believe It's Not Butter"
Bring cooked and coated chicken back to the lemon glaze...and saute for 1 minute.
YUM this is so easy and tastes AMAZING!!!
